Sweet and Sour Jackfruit
Ingredients: Click below for raw sea moss
Dry:
1 cup Spelt Flour
1 tsp Sea Salt
1/2 tsp Chinese Five Spice
1 tbsp onion powder
1 tbsp garlic powder
Combine ingredients in a bowl and mix thoroughly.
Add 2 cups of spring water beginning with 1 cup at a time and mix thoroughly until smooth and thick.

1 thumb of ginger
1/2 cup red onion
1/2 cup scallion
3 cloves of garlic (optional)
Finely chop all ingredients listed above.
Sweet and Sour Sauce:
4 tbsp Ketchup
1/4 cup sugar (date, coconut, or cane)
1/4 cup Coconut aminos
1 tsp Ground black pepper
3 tbsp Coconut vinegar
2 tsp Arrowroot powder ( add 1 tsp water to dilute)
2 tbsp Sea moss gel
1 1/2 tsp fresh ginger juice (we use our juicer)
1/2 cup spring water
1/4 of an orange sliced in wedges (remove when cooking is complete)
Set stove to Med-low heat.
Combine all ingredients in pot and stir except arrow root powder mix.
Stir while adding.
Bring to a boil and add arrowroot mix.
Set stove to low heat and mix thoroughly.
To adjust the sweetness, add more sugar
To adjust the sourness, add more vinegar.
For best results let cool overnight on stove.
Remove oranges and store in refrigerator in glass gar.
Jackfruit Preparation
*Make sure that you have "young jackfruit". The color should be white with a little hint of green. Usually found canned in the Asian markets.*

Drain and rinse jackfruit thoroughly.
Cut off the hard ends of the jackfruit enough to where there is only a thin layer holding the fruit together.
Optional step:
Slice the Jackfruit in half to create 2 pizza shaped slices. Cutting the jackfruit thinner helps to ensure that the flavor is fully absorbed and cooks all the way through with a subtle crispiness. If you want the jackfruit to have more of a sweet and sour chicken look, then keep the pieces thick. However, understand that cooking time will be longer and the inside will be softer.
Add prepared jackfruit to your spelt flour mixture and ensure that all jackfruit is coated evenly.
Add some grapeseed oil to a non-stick pan and place heat on med-high.
Add Jackfruit mix to pan and brown each side.
Add ginger, red onion, and scallion to the pot and mix.
Add 1 cup of sweet and sour sauce recipe and mix.
Set on medium heat, cover pot and let cook for 5 minutes.
Add bell peppers and remaining sauce and mix thoroughly.
Cover and place on low heat for 15 minutes.
The result should look like the picture below.
